Simple Indian 10 minutes Instant Fish Curry Cooking Recipe
Ingredients :-
  • Any fish cut into small pieces -  1/2 Kg
  • Turmeric powder  -  1/2 tsp
  • Chilly powder  -  3 tbsp
  • Curry leaves  -  2 stems
  • Ginger chopped - 1 1/2 tbsp
  • Green chilly  slit in length  -   4-6 no's
  • Kudampuli   -   4-6 cloves (adjust according to your taste )
  • Coconut thick milk   -  1 small cup
  • Small onion chopped  -  2 tbsp
  • Oil  -  2 tbsp ( Coconut oil is better )
  • Salt  -  as required
  • Water  -  1-2 cups

Simple Indian 10 minutes Instant Fish Curry Cooking Recipe
Method :-
  • Take one cooking pot and add  all the ingredients except coconut milk , oil and  small onions.
  • You should add enough water to cover the fish. Just shake the pot.
  • Cook the fish on a low heat by covering with a lid for 5 minutes.
  • Add the coconut milk and let it boil.
  • Switch off the stove.
  • Heat the oil in another pan and add the small onions.
  • Fry them till brown colour. Add some curry leaves and fry for few seconds.
  • Add it into the curry.
  • Serve the delicious fish curry with the plain rice.

  • Cabbage  chopped -   1 small size
  • Onion chopped   -  2 medium size

  • Curry leaves  -  2 stems
  • Shredded coconut  -  4 - 6  tsp (optional)
  • Turmeric powder - 1/4 tsp (optional)

Simple Indian 5 minutes Cabbage Masala Cooking Recipe
Method :-
  • Mix the cabbage with salt , turmeric powder , 1 stem of curry leaves , green chillies for few minutes.
  • Heat the oil in a frying pan / cooking vessel and add the mustard seeds.
  • Let them pop up and add the curry leaves and stir fry for few seconds till the flavour comes out.
  • Add the onion and saute till little colour change.
  • Add the cabbage and mix well.
  • Cover with a lid and  cook the cabbage for 5 minutes on a minimum heat.
  • Add the coconut and again one more minute on a low heat.
  • Serve the cabbage with plain rice / chapati.

         Today let's begin with another sweet dish. It is Coconut-Mango balls. I learnt this recipe from one of my Aunty , who has one bakery. She learnt this mouth-watering Sweet's recipe from her Mexican friend.  It is very simple to prepare. You can serve this dish for your guests on any festive occasions.          Sweet - tart mango is combined with coconut and a hint of spice in this refreshing light candy , Coconut-Mango balls. I added the cayenne powder to mimic the mango flavor combination that is common in Mexican candies.You can add any fruit instead of mango according to your taste.

         The recipe calls for dried mango. But you may need to adjust the amount of fruit or condensed milk o get the right texture. This recipe yields about dozen candies. The preparation time of this sweet dish is 10 minutes only.

  • Dried mango / Powdered mango  -  1/2 cup
  • Sweetened condensed milk  -  1/2 cup
  • Shredded coconut  - 2 cups

  • Finely chopped nuts / toasted coconut for rolling  -  1 cup

Method :-
  • Place the mango in a mixer grinder and blend it until it becomes fine powder.
  • Put the mango powder in a bowl and add the condensed milk, coconut and cayenne
  • Stir until the mixture is blended, then wrap the top and refrigerate for one hour.
  • Place the chopped nuts / toasted coconut in a big bowl.
  • Using a tea spoon, scoop a small spoonful of the chilled candy and drop it to the nuts / toasted coconut.
  • Roll it around until it is coated, then roll it into a ball between your palms.
  • Place the finished candy on a plate and repeat the remaining candy.
  • Serve immediately , or store candy in an air tight container in the refrigerator.

Ingredients :-
  • Sugar  -  2 cups
  • Corn syrup light -  1/2 cup
  • Water  -  1/2 cup
  • Butter  -   2 tbsp
  • Salt -  1/4 tsp
  • Baking soda  -  1 pinch
  • Shredded coconut  -  1 1/2 cups

Method :-
  • Prepare a rectangular steel plate (ceramic plate by lining it with aluminium foil )and spread the foil with little butter.
  • Combine the sugar , corn syrup and water in a medium pan over medium-high heat. Stir until the sugar dissolves and the mixture comes to a boil.
  • Continue to boil and add the butter and stir until the butter is melted.
  • Continue to boil the mixture without stirring for 1 minute.
  • Remove the candy from the heat and immediately add salt ,baking soda and coconut. The mixture will foam up a bit. 
  • Quickly pour the candy in to the prepared pan and smooth it into an even layer.
  • Allow the candy to set at room temperature for several hours. Cut it into small squares to serve.Coconut squares can be stored in an air tight container at room temperature for up to two weeks.

Ingredients:-
  • Chicken legs  -  2 no's
  • Chilly powder  -  1 tsp
  • Turmeric powder  -  1/4 tsp
  • Salt  -  according to your taste
  • Garam masala powder  -  1/2 tsp
  • Oil - 1 cup

Simple Indian Instant 10 minutes Chicken Fry Cooking Recipe 
Method :-
  • Give small cuts on the chicken legs with a knife.
  • Mix all the ingredients with 1 tsp of oil.
  • Apply this mixture on the chicken pieces. Keep it aside for 3-5 minutes in the refrigerator.
  • Heat the oil in a deep frying pan. Let it boil.
  • Reduce the flame to the minimum and keep the chicken legs slowly in the pan.
  • Fry all the sides of the chicken till light brown colour. Turn off the stove.
  • Serve the chicken legs with fried rice,biriyani or plain white rice.
Kitchen Tips :-

Method :-
  • Magnetise the prawns with salt and turmeric powder in a bowl and keep it aside.
  • Heat the oil in a pan / cooking vessel.
  • Add the onion and saute till light brown.
  • Add ginger and garlic paste and saute till light brown.Now you can enjoy the nice flavor.
  • Add the tomato and stir till it becomes mash.
  • Add the green chillies and curry leaves.
  • Stir fry for a few seconds till the flavor comes out.
  • Add the coriander powder and chilly powder and stir well till it becomes little dark on a minimum flame(about 2 minutes).
  • Add the water and mix well for 1 minute.
  • Add the prawns and mix well.
  • Cover with a lid and cook for 3-5 minutes on minimum flame.
  • Turn off the heat and garnish with the coriander leaves.
  • Serve with rotis,chapatis,bread,plain rice,fried rice or biriyani.

              We will start with a delicious and healthy sweet dish once again. Though almost of us are familiar with different types of kheer (payasa), I have found that the payasam just doesn't taste doesn't taste as good. My beautiful and talented sister says, " Your kheer / payasam tastes just like an ice cream. ". My sons say'"Mummy's special kheer / payasam nobody else makes it as delicious and lip smacking ".

             I love festivals , plan for the menu for a festive feast and especially forward to try sweet treats that I'm yet to blog. Badam kheer is an Indian sweet dish that I prepared for Eid Ul Fithar.

             Festivals reflect the cultural diversity of India , a land of many regions. Festivity denotes new clothes, family get together, fun,laughter and most importantly home cooks diligently prepare traditional sweets and elaborate festive meals. Badam kheer / almond-sweet-drink is absolutely mouth-watering. Please find out the ingredients and method of Badam kheer ( almond-sweet-drink) cooking recipe as below.



Simple Indian Badam Kheer (Almond-sweet-drink)

Ingredients:-
  • Almonds ( Badam ) - 1 cup
  • Milk   -    4 -6 cups
  • Sugar   -   same amount as almond paste (about 1 cup )
  • Saffron - 1/2 tsp
  • Cardamom  -    4-6 no's
  • Kesari powder ( Yellow food colour) - 1 pinch (optional)


Simple Indian Badam Kheer ( Almond-sweet drink ) Recipe
Method :-
  • Soak almonds in warm water for 1 hour.
  • Peel skin and grind the almond in to a fine paste with 1 cup of milk instead of water.
  • Measure the amount of almond paste and keep the same amount of  sugar aside.
  • Soak saffron in little cold milk, and keep it aside.
  • Cook the almond paste for 5-10 minutes,while stirring it constantly ,till the flavor comes out.
  • Now add sugar and keep stirring.
  • Add the remaining milk, and boil for 10-15 minutes.
  • Add the ground cardamom an turn off the stove.
  • Add the soaked saffron and kesari powder. Mix well.
  • Serve it cold.

Kitchen tips :-
  • If you like the taste of coconut milk , add instead of cow's milk. Will you try this kitchen tip ?
  • You can add the jaggery syrup instead of sugar. You will get another delicious taste.Try this kitchen tip.
  • You can add a small tin of condensed milk in the last stage.You will get wonderful taste.Try this kitchen tip.
  • You can fry few raisins / kishmis and cashew nuts in 1 tbsp of ghee and add in the kheer at the last stage. Try this kitchen tip also.

          Today I am going to present a non veg dish , of course with delicious taste. It is your favoutite Chicken curry. Whenever I prepares varity of chicken dishes I used to memember my loving mom, because I learnt these from my mom. In my first trial of this recipe, the taste was ok... not delicious.Because I made myself in the absnce of my mom. My husband told me the negative points and suggested the ideas how to get the real taste of my mom's Chicken curry.Then on the second trial I got excellent taste. My sons told,"Mummy, what a delicious chicken curry , yaammi......yaammi......"On that day my kids(chicks) ate more rotis / chappathis with the simple Indian Chicken curry.Now I would like to share the recipe with you. Please read out the ingredients and method to make the simple Indian Dry chicken curry.


Simple Indian Dry Chicken Curry Cooking Recipe
Ingredients :-

  • Chicken cut in to medium size - 1 Kg
  •  Onion sliced - 3 big size
  • Tomatoes slices - 2 big size
  • Ginger paste - 2 tbsp
  • Garlic paste - 3 tbsp
  • Cashew nuts paste - 2 tbsp
  • Green chilly slit in length - 6 no's
  • Curry leaves - 2 stems
  • Coriander leaves chopped - 2 tbsp
  • Garam masala powder - 1 1/2 tbsp
  • Red chilly powder - 1 1/2 tbsp( adjust according to your taste
  • Coriander powder - 2 tsp
  • Turmeric powder - 1 tsp
  • Black pepper  powder - 1/4 tsp
  • Yoghurt / Dhahi / Curd - 1 tbsp
  • Cardomom - 2 no's
  • Fennel (Perum Jeerakam / somf) - 1 tsp
  • Oil - 3 tbsp
  • Salt - according to your taste

Simple Indian Dry Chicken Curry
Method :-
  • Magnetise the Chicken pieces with little pepper powder,turmeric powder,salt,chilly powder,garam masala powder and full quantity of yoghurt. Keep it aside for half an hour.
  • Heat the oil in a cooking vessel and add the onions and saute till light brown.
  • Add the ginger and garlic paste and saute till light brown coloour.
  • Add the tomatoes and stir well till it becomes mash.
  • Add the green chillies and curry leaves and fry for few seconds till the flavors are  releasing.
  • Add the coriander  powder and chilly powder and stir for 2-3 minutes on the low flame till it becomes dark brown colour .
  • Add garam masala powder,mashed crdomom and fennel. Stir well.
  • Add the water and stir for 5 miuutes.
  • Add the magnetised Chicken pieces.
  • Cook for 30 minutes on a low heat by covering with a lid.
  • Add Cashew nuts paste.
  • Add the salt and water if necessary.
  • Turn off the heat.
  • Garnish the Chicken curry with chopped coriander leaves and serve with rotis / chappathis , plain rice /  fried rice / biriyani.
Kitchen Tips :-
  • Add little salt while you are sauting the onion in the oil. If you do so, the onion will be in brown colour very soon. It will reduce your cooking time. Try this interesting kitchen tip !!!
  • When you magnetise the chicken pieces, add little yoghurt / curd for the chicken to be cooked fast. Will you try this kitchen tip.
  • If you like the taste of coconut milk,add the coconut milk just before turning off the stove and just boil.It will be more delicious. Is this good kitchen tip???

          Simple Indian instant Loki-Prawns curry is very simple, every day dish regularly cooked in many South Indian kkitchens.  You can make this healthy curry with either dry or fresh prawns ( shrimps ).This is an instant dish which can be prepared within 10 minutes if all the ingredients are ready. Loki / Chorakka and prawns are cooked with onion and tomatoes and it makes a great curry with rotis,chappathis,Kappa / Kizhangu, idiyappam / noolappam , puttu and plain rice. Simple Indian Instant Loki-Prawns Curry Cooking Recipe
Ingredients :-
  • Dry / fresh prawns - 1 cup
  • Loki / Chorakka
  • Loki / Chorakka cut into small cubes - 1 big size
  • Tomatoes sliced - 4 medium size
  • Onion sliced - 1 small
  • Curry leaves - 2 stems
  • Ginger chopped - 1 small piece
  • Water 2 cups
  • Green chillies slit in length wise - 4 no's
  • Turmeric powder - 1/2 tsp
  • Coriander powder - 1 tsp
  • Red chilly powder - 2 tbsp ( adjust according to your taste )
  • Salt - according to your taste
  • Tamarind - 1 small ball
  • Coconut grated - 1 cup
  • Oil - 1 1/2 tbsp
  • Small onions chopped - 2 tbsp


Simple Indian Instant Loki-Prawns Curry Cooking Recipe
Method :-
  • Take a pressure cooker and add all the ingredients ( except the prawns and last four ingredients )
  • Pressure cook it till 2 whistles come out or till it becomes little mash. Let the air goes out from the cooker.
  • Add the prawns in to the cooker and let it boil for 2-3 minutes.
  • Make tamarind water with 1/2 cup of water. Add this to the cooker.
  • Grind the coconut in a mixer grinder with 3/4 cup of water.
  • Add this to the cooker and let it boil.
  • At this stage add little more salt and water if necessary.
  • Turn off the heat.
  • Heat the oil in a pan. Add the small onion and saute till light brown.
  • Add 1 stem of the curry leaves and fry it for few seconds till the flavour comes out.
  • Switch off the stove and add this to the pressure cooker.
  • Pour the curry into a large bowl and serve.


Kitchen Tips :-
  • If you don't like the flavor of coconut ,you can avoid it. With this kitchen tip there will not be any change in its delicious taste.
  • Always close the curry with a lid for 5-10 minutes after the preparation. It will lock the flavor in it and it will have yaammy....yaammy taste. Have you ever tried this kitchen tip ???
  • If the green mango ( Kacha aam ) is available , you can add one mango instead of the tamarind and tomatoes. Will you try this interesting kitchen tip ???
  • To get more thickness, you can add 1/2 cup of Daal when you boil the Loki. Try this kitchen tip also !!!

You can prepare this coconut chutney within 10 minutes. It is an every day dish regularly cooked in many Indian kitchens. If you are working some where, this special instant chutney will be helpful to you. I learnt  this simple recipe from my mom. She is a good cook. Whatever food she makes is very delicious. She makes all food items  very fast also. I would like to share the recipe with you. Please find out the ingredients and method of simple Indian instant coconut chutney cooking as below.

             The simple Indian instant coconut chutney is cooked by grinding the coconut,green chillies,curry leaves, small onion,and salt finely. This is a thick (little loose) chutney. All children as well as adults like this special simple Indian coconut chutney.

Ingredients :-
  • Coconut grated - half of a coconut
  • Green chillies - 6-8 no's
  • Small onions chopped - 6 no's
  • Curry leaves - 2 stems
  • Mustard seeds - 1 tbsp
  • Water - 1 cup
  • Oil - 1 tbsp
  • Salt - 1/4 tsp (according to your taste)


Simple Indian Instant Coconut Chutney Cooking Recipe
Method :-
  • Add the coconut,salt,1 stem of curry leaves,water and green chillies in to a mixer grinder and grind it well.
  • Heat the oil in a cooking vessel and add the mustard seeds.Let them pop up.
  • Add the remaining curry leaves and fry for few seconds till the flavors go into the oil.
  • Add the previously prepared ground mixture and let it boil.
  • Add the water and salt if necessary.Once again let it boil for 2 minutes.Turn off the heat.
  • Serve with dosa / iddaly.

Kitchen Tips :-
  • If you want little sour taste in the coconut chutney, grind a small piece of tamarind / Irimban puli(a vegetable found in Kerala) with other ingredients. Will you try this interesting kitchen tip ???
  • If you grind a small piece of ginger with other ingredients, you will get another variety of coconut chutney. Try this healthy kitchen tip.

           Simple Indian Aloo Karela Masala is a vegetarian dish with overtones of South Indian style of cooking.I learnt this recipe during my working days from one of my South Indian friends who would bring it in her tiffin box with rice.I remember the days when we would swap our tiffin boxes and how I'd lap up delicious South Indian tiffins like masala dosas,idlis and vada while my friends would relish North Indian food like stuffed parathas and pulaav.

         I always tried out different combinations of a particular dish(which is new to me) using different spices with recipes like potato - peas and potato - spinach finally settle for one which is suited to my palate in terms of spice and flavor. If I feel that the flavor of a dish needs to be pepped up a bit in terms of spice then I do make a subtle change without playing too much with the ingredients and cooking style of the authentic original recipe.The end result has never been disappointing so far and I always had my family and friends relish the food served to them.

           Simple Indian Aloo Karela masala is very simple,everyday dish regularly cooked in many Indian kitchens.Boiled potatoes are cooked in a spiced gravy of onions and tomatoes and it makes a great curry with bread,rotis and chapatis.I also make this sometimes as an accompaniment to a subtle flavored rice or steamed white rice. Simple Indian Aloo Karela Masala Cooking Recipe

Ingredients:-

  • Bitter guard (karela)                            –          2 large size
  • Potatoes (aaloo)cut into small cubes     -          4 medium size
  • Onion chopped finely                            -          2 large
  • Garlic finely minced                              -          5 cloves
  • Ginger finely minced                             –          1 small piece
  • Dry red chilies crushed                         –          4 no’s
  • Curry leaves                                         -          2 stems
  • Green chilly slit length wise                   –         3 no’s
  • Red chilly powder                                 -          1 tsp (adjust according to your choice)
  • Turmeric powder                                   -         1/4 tsp
  • Salt                                                      –         according to your taste
  • Tomatoes finely chopped                       -         2 medium sized
  • Water                                                  –        1 cup
  • Oil                                                       -        1 1/2 tbsp


Simple Indian Aloo Karela Masala Cooking Recipe

Method:-
  • Cook the potato and bitter guard with salt and turmeric powder in the water.Boil on low heat
  • Heat oil in a cooking vessel and add the onion and saute till the onions turn light brown.
  • Add ginger and garlic and saute till they turn light brown.
  • Now add the green chilies and curry leaves and stir fry for a few seconds till the flavors are released in the oil.
  • Add the tomatoes and stir fry till the oil separates and it gets mushy.
  • Add all the powders and stir for 10 seconds.
  • Add the previously boiled potatoes and bitter guard into this.
  • Mix well and keep covered with a lid on low heat for 2 minutes.
  • Remove the lid and Add salt (if necessary) and enough water to cover the potatoes.
  • Cook further for another 3-4 minutes stirring once in a while.
  • Bring to a boil and let it simmer on low heat till you get the desired curry consistency.
  • Turn off heat.If you like Garnish Aloo Karela Masala with chopped coriander leaves.
  • Serve hot with steamed white rice.

         I learnt the Simple Indian Bitter Gourd Curry cooking recipe from my grand mom. Bitter Gourd is a very healthy vegetable which is beneficial for the diabetic patients. Few diabetic patients drink the Bitter Gourd juice. My grand mom also used to make the Bitter Gourd juice for my grand father. But he used to dislike to drink that juice because of its bitter taste. So my grand mom started to make the Bitter Gourd curry and aaloo( potato)-karela ( Bitter Gourd) masala for my grand father. My grand pa like the delicious taste of these dish items. Now he is very healthy.

          Bitter Gourd( Karela ) is also a good vegetable for the youngsters. You will get many vitamins from Bitter Gourd. Its regular use helps to prevent many complications like hypertension , eye complications,neuritis and defective metabolism of Carbohydrates.  It helps to increase body's resistance against infection. Bitter Gourd is a herb that helps regulate the blood sugar levels and keeps body functions operating normally. I follow the same recipe of my grand mom My kids and husband like these Aaloo-Karela masala and Bitter Gourd curry.


Simple Indian Bitter Gourd Curry Cooking Recipe
Ingredients :-
  • Bitter Gourd ( Karela ) - 2 large size
  • Sliced onion - 2 large
  • Ginger finely minced - 1 small piece
  • Tomatoes sliced - 3 large size
  • Tamarind - 1 ball (small)
  • Curry leaves - 2 stems
  • Green chilly slit in length wise - 3 no's
  • Red Chilly powder - 1 tbsp ( adjust according to your taste)
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 1/2 tbsp
  • Water - 2 cups
  • Salt - according to your taste
  • Oil - 2 tbsp

Simple Indian Bitter Gourd ( Karela ) Curry Cooking Recipe
Method :-
  • Cook the Bitter Gourd with salt and turmeric powder in 1 cup of water.
  • Heat oil in a cooking vessel and add the onion.
  • Saute the onion till it turn light brown.
  • Add ginger and saute till it turn light brown colour.
  • Now add the green chillies and curry leaves and stir for few seconds till the flavors are released in the oil.
  • Add the tomatoes and stir for 2 minutes.
  • Add all the powders and stir for 10 seconds on a low flame.
  • Add one cup of water and let it boil.
  • Make the tamarind pulp in 1/2 glass of water and add it to the vessel.
  • Cover with a lid on low heat for 2 minutes.Now the tomatoes will be cooked.
  • Add the previously cooked Bitter Gourd and mix well.Cover with a lid on low heat for 2 minutes again.
  • Remove the lid and add the salt and little more water ( if necessary ) to cover the Karela.
  • Cook further for 3-4 minutes stirring once in a while.
  • Switch off the stove and serve it with the plain rice.

Kitchen Tips :-
  • If you like the taste of the coconut ,you can add the coconut milk at the last stage.Then you will get one rich Karela (Bitter Gourd) curry.Is this one interesting kitchen tip ???

          Simple Indian Steamed Sweet Rice Cake ( Vatteppam in Malayalam) is a delicious South Indian especially Kerala traditional dish which is very simple to make. This is a dish made with rice powder , coconut and yeast / real toddy. All children as well as adults definitely like this vatteppam. This is a very simple preparation which you can have at breakfast,dinner or at tea time. This is a special dish item which you can serve for your guests.

         I learnt Simple Indian Steamed Sweet Rice Cake ( Vatteppam ) cooking recipe from my mom. We are Christians. Probably my mom used to prepare vatteppam on special occasions like X-mas , Easter and some feast belongs to our church. We used to give this special dish to our non-Christians neighbours and friends. They all appreciate my mom for her special vatteppam. Obviously I also follow her special vatteppam recipe. My mom used to prepare the vatteppam with the real toddy at our native place,Kerala. But now I am staying in UAE with my family. Here the real toddy ( made in Sri Lanka) is available in rare places only. So I used to make the vatteppam with the yeast. Many friends told me that the yeast is hopeless for vatteppam and the real toddy should be there. But I proved them wrong with my special vatteppam. Now my friends also learnt how to make the delicious and soft vatteppam without real toddy. Now I would like to share this special vatteppam recipe with you. Please  find below the ingredients and method to prepare the Simple Indian Steamed Sweet Rice Cake ( Vatteppam )



Steamed Sweet Rice Cake ( Vatteppam ) Cooking Recipe
Ingredients :-
  • Fried rice powder - 2 cups
  • Cooked rice - 1 tbsp
  • Yeast - 1 tsp
  • Sugar - 4 tbsp
  • Semolina( Rava/ Sooji) - 3 tbsp
  • Coconut - Half of a coconut
  • Cashew nuts - 8 no's
  • Cardamom - 6 no's
  • Raisins / Kishmis -- 12 no's
  • Salt - 2 pinch ( According to your taste)

Steamed Sweet Rice Cake Cooking Recipe
Method :-
  • In a small bowl,add 1/4 glass of lukewarm water , yeast and 1 tsp of sugar and keep it for 10 minutes closed. ( Do not add very hot water as the yeast will not rise.)
  • Heat another cooking vessel and add the rava and 1 glass of water and boil till it becomes thick. Keep it for sometime to cool.
  • When it becomes cool, add this to  a mixer grinder.
  • Add the coconut,cooked rice ,salt,remaining sugar and previously prepared yeast to the mixer grinder and grind them with the minimum amount of water.Pour this to a big steel pot.
  • Then grind the rice powder with minimum amount of water. (Take care to add minimum amount of water when you grind the rice powder.) Add this to the same pot.
  • Mix all till it becomes little thick.If it is still too much watery add little more rice powder and mix well.
  • Cover with a lid and keep it for 6-8 hours to rise.
  • After the specified time add the ground cardamom and mix well slowly.
  • Apply little oil in a steel flat plate and add the prepared mixture in the 3/4 of the plate. For decoration add the raisins and cashew nuts.
  • Make ready one pot ( steamed cooker/ Appa chembu in Malayalam)for steaming.Keep the plate in the prepared hot steamed pot. Cover with a lid.
  • Steam the cake / vatteppam till a knife inserted in it comes out clearly.
  • Take out the plate and let it cool for some time.Yaami...Yaami..the vatteppam is ready.
  • Slice the cake / vatteppam as desired.

           You can serve the simple Indian Steamed Sweet Rice Cake ( Vatteppam ) with the chicken curry / Duck roast / egg curry / Beef stew / vegetable stew/ chicken stew/ mutton stew/ mutton curry/ beef curry.It is a good combination.

  • If the coconut water is available , you can rice the yeast in one coconut's water by adding 1/4 tsp of yeast and 1 tsp of sugar and keep it for 10 minutes.You can make the real toddy flavor like that. Try this interesting kitchen tip. Will you?

    Loki ( Chorakka )
  • Daal - 1 cup
  • Loki ( Chorakka ) pealed - 1 big size

Simple Indial Instant Loki-Daal Cooking Recipe
Method :-
  • Cut the loki into small pieces. Wash the daal.
  • Take a pressure cooker and add all the ingredients except the last four ingredients.
  • Pressure cook it for two vistles or until it becomes mashy.Keep it aside.
  • Heat oil in another cooking vessel and add the mustard seeds and let them pop.
  • Add the garlic and saute till they turn light brown.
  • Now add the red chillies and stir fry for a few seconds.
  • Turn off the fire.
  • Add this into the pressure cooker and mix well.
  • Serve with rotis,plain rice or chappathis.

          We will start with a delicious sweet dish once again. Though most of us are familiar with many kheer, I have found that the kheer just doesn't taste as good. My beautiful and talented niece says "Aunty's payasam tastes like an ice cream. " My sons say "Mummy's special kheer  nobody else makes it as delicious and lips smacking."
           I love festivals and plan the menu for the festive feast and especially try for  sweet treats that I'm yet to blog. Simple Indian Ada-pradhamman is a traditional South Indian sweet dish that I prepared for our Onam festive meal. It is absolutely mouth watering. You can have this kheer after the meal or at any time. It is tasty when it is either hot or chilled.
          Simple Indian Ad-Pradhamman is prepared with the cooked Ada (made of flakes of cooked rice) that is roasted in jaggery syrup ,slowly simmered in coconut milk and ghee , flavored with aromatic cardamom and garnished with toasted cashew nuts and raisins. It is simple to prepare,quick,comforting and delicious with a heavenly aroma !!!

Simple Indian Ada - Pradhamman Kheer Cooking Recipe
Ingredients :-
  • Ada - 250 gm
  • Jaggery - 500 gm
  • Coconut 3 no's
  • Ghee - 200 gm
  • Cardamom - 10 no's
  • Cashew nuts - 10 no's
  • Raisins - 15 no's
  • Coconut sliced - 50 gm
  • Water - as required

Simple Indian Ada pradhamman Kheer Cooking Recipe
Method :-
  • Melt the jaggery in one cup of water and keep this syrup aside.
  • Boil water and keep the ada in it till it is cooked soft ( about 20 minutes )
  • Wash the cooked ada in cold water and drain it and keep it aside.
  • Take two extracts of the coconut milk and keep the 1st (thick) and 2nd ( little loose) coconut milk separately.
  • Mix the jaggery syrup with the cooked ada and stir for 10 minutes in low fire.
  • Add the second coconut milk extract to the above mixture. Bil this until it becomes thick.
  • Add the half of the ghee and the first extract of the coconut milk.Let it boil and switch off the fire.
  • Add the ground cardamom and mix it well. Now you can enjoy a mouth watering aroma !!!
  • Fry the cashew,sliced coconut and raisins in the remaining ghee and garnish the kheer.
  • Serve the kheer hot or cold.

Kitchen Tips :-
  • When you prepare any type of kheer , it is good to add a small tin of condensed milk at the last stage.This is a wonderful kitchen tip.
  • Another important tip is that you can prepare the jaggery syrup and keep in the refrigerator one week before the preparation.In such a way you can reduce the cooking time.
  • If you are conscious about your health ( cholesterol) , you can substitute the low fat cow's milk for the coconut milk.This is another healthy kitchen tip.

           Simple Indian Sweet and Sour Ginger Sauce is a perfectly balanced condiment,where in fresh ginger is fried and cooked in the sourness of tamarind and sweetness of jaggery and spiced up with the pungent taste of ginger itself. It is a South Indian traditional dish. I prepared this for our Onam festive meal. My grandma's version is the tastiest preparation I have ever tasted in my life. Though my mother follows the same recipe,which she has passed on to me,both of us have never been successful in bringing that right balance of sweetness and sourness,my grandma used to achieve in her preparation. The taste and aroma of her sweet and sour ginger sauce still lingers in my mouth. I would like to share the recipe with you. Please find out the ingredients and method of Simple Indian Sweet and Sour Ginger Sauce as below.

Simple Indian Sweet and Sour Ginger Sauce Cooking Recipe
Ingredients :-
  • Minced fresh ginger tightly packed - 1/2 cup
  • Green chillies finely chopped - 3-4 no's
  • Curry leaves finely chopped - 3 stems
  • Mustard seeds - 1/2 tsp
  • Fenugreek seeds / Uluva - 1/4 tsp
  • Black gram / Urad daal / Uzhunnu parippu - 1/4 tsp
  • Whole dry red chillies - 2 no's
  • Water - 1 1/2 cups
  • Coconut oil - 3 tbsp
  • Jaggery boiled in water / jaggery syrup - 2 tbsp (adjustable according to your taste)
  • Tamarind concentrate - 3-4 tsp (according to your taste)
  • Turmeric powder - 1/4 tsp
  • Chilly powder - 1/4 tsp
  • Salt - 2 pinch ( as required)

Simple Indian Sweet and Sour Ginger Sauce Cooking  Recipe
Method :-
  • Heat the oil in a small deep sauce pan and add the mustard seeds,fenugreek seeds,urad daal and red dry chillies in the order.
  • Add minced ginger,curry leaves and green chillies and stir well until ginger turns golden brown,in a low flame.Enjoy the wonderful aroma coming out of the pan at this point.
  • Add the water,tamarind pulp and jaggery.Mix it well.
  • Add the chilly powder,salt and turmeric powder.Mix well.Adjust the tamarind-jaggery balance by doing a taste test and add the extra bit if necessary.
  • Cover with a lid and let it boil on a low flame.
  • Let it thicken until it reaches half the quantity of the water. At this stage turn off the stove.
  • It thickens more when it sits in the room temperature.

Kitchen Tips :-
  • Simple Indian sweet and sour ginger sauce is a preservable dish item because it does not contain the onion.This is very important kitchen tip.
  • This can be made  in advance and stored in refrigerator for many months.You can prepare this ginger sauce 1-2 weeks before any festival.The taste will be more.This is another kitchen tip.

            Simple Indian Pineapple - Carrot Cake is one of the variety among the cakes. I learnt this recipe during my working days from one of my friends who is an Anglo-Indian from Goa. On every Christmas and Easter festivals she used to bring the special cakes like Chocolate Pan CakeCarrot cake,Fruit cake, Banana cake, Coconut cake , cup cakes, Ice cream cake, etc. Still I remember the delicious taste of each one. I also used to make wonderful cakes on Christmas and birthday parties.


            Simple Indian Pineapple - Carrot cake is a nutritious cake which is very easy to make with the oven. The children those who do not like to eat the carrots, will definitely enjoy this healthy and delicious carrot cake. Simple Indian Pineapple - Carrot Cake Cooking Recipe
Ingredients :-

For the cake:


• 2 cups granulated sugar

• 1 1/3 cups vegetable oil

• 3 extra-large eggs, at room temperature

• 1 teaspoon pure vanilla extract

• 2 1/2 cups plus 1 tablespoon all-purpose flour, divided

• 2 teaspoons ground cinnamon

• 2 teaspoons baking soda

• 1 1/2 teaspoons kosher salt

• 1 cup raisins

• 1 cup chopped walnuts

• 1 pound carrots, grated

• 1/2 cup diced fresh pineapple


For the frosting:

• 3/4 pound cream cheese, at room temperature

• 1/2 pound unsalted butter, at room temperature

• 1 teaspoon pure vanilla extract

• 1 pound confectioners' sugar, sifted


For the decoration:

• 1/2 cup diced fresh pineapple

Simple Indian Pineapple - Carrot Cake Cooking Recipe
 
Method :-

  • Preheat the oven to 350 degrees F.
  • Butter 2 (8-inch) round cake pans. Line with parchment paper, then butter and flour the pans.
For the cake:

  • Beat the sugar, oil, and eggs together in the bowl of an electric mixer fitted with the paddle attachment until light yellow.
  • Add the vanilla. In another bowl, sift together 2 1/2 cups flour, the cinnamon, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients.
  • Toss the raisins and walnuts with 1 tablespoon flour. Fold in the carrots and pineapple. Add to the batter and mix well.
  • Divide the batter equally between the 2 pans. Bake for 55 to 60 minutes, or until a toothpick comes out clean.
  • Allow the cakes to cool completely in the pans .

For the frosting:

  • Mix the cream cheese, butter and vanilla in the bowl of an electric mixer fitted with the paddle attachment until just combined.
  • Add the sugar and mix until smooth.
  • Place 1 layer, flat-side up, on a flat plate or cake pedestal.
  • With a knife or offset spatula, spread the top with frosting.
  • Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake. Decorate with diced pineapple.
  • Cut as desired and serve.

  • Always use the fresh eggs, when you bake the cakes.It will increase the softness of the cake. This is one simple kitchen tip.
  • Another kitchen tip is that when you keep the prepared cake for 2 days, the taste will be more.
  • To reduce the smell of the eggs ,add 1/2 tsp of any essence (vanilla or pineapple)
  • Another important kitchen tip is that add the very dry and finest fruits into the cake mixture.

            Simple Indian Carrot Cake is one of the variety among the cakes. I learnt this recipe during my working days from one of my friends who is an Anglo-Indian from Goa. On every Christmas and Easter festivals she used to bring the special cakes like Chocolate Pan Cake , Pineapple - Carrot cake,Fruit cake, Banana cake, Coconut cake , cup cakes, Ice cream cake, etc. Still I remember the delicious taste of each one. I also used to make wonderful cakes on Christmas and birthday parties.

           Simple Indian Carrot cake is a nutritious cake which is very easy to make with the oven. The children those who do not like to eat the carrots, will definitely enjoy this healthy  and delicious carrot cake. Please find the Simple Indian Carrot Cake ingredients and method to cook.

Ingredients of Simple Indian Carrot Cake Cooking Recipe

For the cake:-
  • Carrots grated - 4-6 no's
  • Eggs - 4 no's
  • Maida - 2 cups
  • Sugar - 2 cups
  • Baking Soda - 2 tsp
  • Ground Cinnamon - 2 tsp
  • Vegetable oil - 2 tbsp
  • Salt - 1 tsp
  • Butter for spreading - as required

For the frosting:
  •  Cream cheese, at room temperature - 3/4 pound
  •  unsalted butter, at room temperature - 1/2 pound
  •  Pure vanilla extract - 1 tsp
  •  Powdered sugar, sifted - 1 pound 


Method of Simple Indian Carrot Cake Cooking

For the cake :-
  • Preheat the oven to 375 degrees.
  • Apply the butter on a 9 by 13 inch sheet pan or two 8 inch round pans and keep it aside.
  • In a large bowl sift together maida flour, sugar, baking soda,cinnamon and salt.
  • Take another small bowl and beat in the eggs and oil together well.
  • Add this beaten eggs in to the first large bowl and mix them well.
  • Add the carrots and stir until  well combined.
  • Pour this batter into prepared pan(s).
  • Bake for 30 - 40 minutes or until toothpick inserted in the centre comes out clean.
  • Remove from the oven and let it be cooled.

For the frosting :-


  • Mix the cream cheese, butter and vanilla in the bowl of an electric mixer fitted with the paddle attachment until just combined.
  • Add the sugar and mix until smooth.
  • Place 1 layer, flat-side up, on a flat plate or cake pedestal.
  • With a knife or offset spatula, spread the top with frosting.
  • Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake. Decorate with diced pineapple.
  • Slice as desired and serve.

Kitchen Tips :-
  • Always use the fresh eggs, when you bake the cakes.It will increase the softness of the cake.
  • When you keep the prepared cake for 2 days, the taste will be more.
  • To reduce the smell of the eggs ,add 1/2 tsp of any essence (vanilla or pineapple)
