Ingredients :-
  • Mixed fruits cut into small cubes - 2 cups
  • Pitted Dates chopped- 1 tbsp
  • Cashew nuts - 1 tbsp
  • Raisins ( Kishmis) -1 tsp
  • Pista chopped - 1 tsp
  • Honey - 4 tsp
  • Orange juice - 1 cup
  • Mango juice - 1 cup
  • Sugar 2 tbsp (adjust according to your taste)

          Simple Indian Fruit Salad is my Aunt's recipe.She is an expert in this cuisine.She used to cook  fruit salad in the festive meals and get together.Now a days I used to prepare good food items for my husband and kids.My cooking made a good friendship and relationship in my family.I like to make the same food items available in the restaurants at my home.My husband and my kids always like the homely food which I make.They are healthy also.
          Simple Indian Fruit Salad is a delicious and nutritious sweet dish which can be served as a pudding after the meal or at any time.Generally, many children are not interested to eat all kinds of fruits.Some like some specific fruits, not all.But all the fruits contain different types of vitamins,minerals,fibres etc.Most of the mothers are worried about their kids food habits.Now all mothers can be get rid of this tension with this nutritious fruit salad.All children as well as adults definitely like this Simple Indian Fruit Salad.Fruit salad can be prepared in many ways.I would like to share first method with you.Please find out the fruit salad cooking method 1 as below.

Simple Indian Fruit Salad - Method 1 Cooking Recipe

Ingredients:-

  • Custard Powder - 3 tbsp

  • Mixed fruits cut in to cubes - 2 cups

  • Full cream milk - 3 cups

  • Cashew nuts chopped- 1 tbsp

  • Pista chopped- 1 tbsp

  • Badam chopped- 1tbsp

  • Sugar - 3 tbsp(adjustable)

  • Vanilla essence - 1/2 tsp

  • Saffron - 1 pinch (for giving good colour)

Simple Indian Fruit Salad - Method 1 Cooking Recipe

Method :-

  • Take a small bowl and add the custard powder , sugar and 5 tbsp of milk and mix well.

  • Heat the remaining milk in another cooking vessel.

  • Just before boiling the milk add the previously mixed custard powder and vanilla essence in to it and stir in the low heat.

  • Turn off the heat and let it be cooled.

  • Add the fruits and nuts into it and mix well.

  • Refrigerate it and serve.


Kitchen Tips :-
  • When you serve the fruit salad decorate it with any ice cream.
  • Nuts are not compulsory.
  • Instead of Saffron you can use artificial yellow food colour one pinch.
  • At the time of preparation, if you do not get the exact thickness, mix 1 tbsp of corn flour in 3 tbsp of milk and add it to the vessel.

                We will start with a delicious sweet once again. Though most of us are familiar with semiya payasam, I have found that the payasam just doesn’t taste as good. My kids say that payasam tastes just like ice cream. They say that my special payasam, nobody else makes it as delicious and lip smacking.

               I love festivals and plan the menu for a festive feast and especially look forward to try sweet treats that I’m yet to blog. Semiya Payasam is a traditional South Indian sweet dish that I prepared for our Onam festive meal. Festivals reflect the cultural diversity of India, a land of many religions. Festivity denotes – new clothes, family get together, fun, laughter and most importantly home cooks diligently prepare traditional sweets, savories and elaborate festive meals. Semiya Payasam (Vermicelli Kheer) is a South Indian traditional festival sweet that is absolutely mouth-watering.

               Semiya Payasam is prepared with Indian vermicelli that is roasted in ghee to a golden color, slowly simmered in milk and sugar, flavored with aromatic cardamom and garnished with toasted cashew nuts and raisins. It's cooking time is 20 minutes only.Simple to prepare, quick, comforting and delicious with a heavenly aroma!

    Simple Indian Vermicelli kheer (Semiya payasam)Cooking Recipe

    Ingredients :-
    • Full cream milk -1/2 litre
    • Semiya/vermicelli -1 cup
    • Sago/sabhudana/saggu biyyam/chawari(optional) 2-3 tbsps
    • Sugar (adjust according to your taste) - 1/2 – 3/4 cup
    • Nestle Sweetened Condensed Milk { Milk Maid} - 1 small Can (optional)
    • Cardamom powder-1 tsp
    • Cashew nuts-10-12 no’s
    • Raisin/ Kishmis-1 tbsp
    • Ghee-2 tbsp

    Simple Indian Vermicelli kheer (Semiya payasam)Cooking Recipe

    Method :-
    • Heat a pan, add a tbsp of ghee and toast the cashew nuts and raisins till golden brown. Remove from pan, keep aside.
    • In the same pan, add the vermicelli and roast it for approx 4 minutes till a nice aroma emanates the kitchen and it turns a light brown shade. Remove from pan and keep aside.
    • Take a cooking vessel, add the sago and three cups of water and cook for 5 minutes.
    • Add the roasted vermicelli and let it cook completely.
    • Add sugar and milk and let it slowly simmer for another 7-8 minutes, stirring it once in a while.
    • Add the Condensed Milk and stir it for 2 minutes.
    • Add the cardamom powder and toasted cashews and raisins. Serve warm or chilled. It tastes good both warm and chilled.With this ingredients,you can serve the dish for 6-8 persons. 

    Kitchen Notes :-

    • You will find that once you turn off the flame and the payasam sits, the semiya will absorb the milk and the payasam will thicken. The payasam thickens even when refrigerated. So at the time of serving, add some warm milk (a few tbsp) and combine well and serve. For a rich taste, use whole milk.
    • Instead of sugar you can add 1/2 cup of  Jaggery /Unrefined sugar syrup.

              Simple Indian Rava Laddoo is a delicious and nutritious sweet dish which is very easy to make . All children as well as adults definitely like this Simple Indian Rava Laddu . On the right side you can see how the Indian Rava Laddu should be after you make it. It is very delicious and can be served after a meal or had any time. Please find below the Simple Indian Rava Laddu recipe and method to make it.

              Rave laddu or rava laddoo is one of my favorite sweets from my childhood. My mother used to make these beautiful yellow colored laddoos with one kishmish(raisin) in each. I absolutely adored these. Though I always ran away when she made these (I was a very lazy kid), I promptly reached to taste them when they were done. Then there were some instances where I offered help and almost burnt my hands by putting them in hot laddoo mixture.

              My mom usually does not add saffron.She uses a pinch of yellow food color to get the bright yellow color to these. Her version is not too oily or too dry (which I observed in the laddoos made by others). Since I didn’t want to use the color, we used saffron. It gave a nice aroma.

    Simple Indian Rava Laddoo Cooking Recipe

    Ingredients:-

    • Fine wheat sooji/rava-1 cup
    • Sugar-1 cup
    • Few strands saffron(optional)- 1 pinch
    • Raisins-1 tea spoon
    • Badams chopped-1 tsp
    • Pista chopped- 1 tsp
    • Cashews - 1/4 cup
    • Cardamom powder-1/2 tsp
    • Water-1/2 cup
    • Ghee-1/4 cup

    Simple Indian Rava Laddoo Cooking Recipe

    Method :-

    • Heat ghee and add cashews, badam,pista and raisins.
    • Let the raisins slightly puff up in hot ghee.
    • Add sooji and fry on medium heat mixing continuously till a nice aroma comes out of it. Take out the sooji in a plate.
    • In the same pan, add water, sugar and heat. Add the saffron strands. Boil it for few minutes.
    • Switch off the heat and add sooji and mix well.
    • Add cardamom powder and mix well. At this stage, the mixture becomes too watery which is perfectly fine. It gets dry as time passes. Close the lid of the pan and let it sit for about 15-20mins.
    • When it is dried and can be handled, apply some ghee to hands and make small balls.
    • When they are cooled to room temperature, store in air tight containers. Finish them within 1 week.This recipe makes about 8-10 laddoos.

    Please note the following :-

    • The cardamom powder should not be added till the end. If it is added before, the laddoos loose their aroma.
    • Some people add milk at the end when the laddoo mix becomes too dry. Avoid this situation as much as possible. This decreases the shelf life.
    • If the mixture does not get dry after keeping for about 20mins, you can slightly heat it to get it dry.
    • If the rava is not roasted properly, the laddoos come out to be very sticky. So fry till it turns slightly reddish.

              I learnt Simple Indian Beef Stew Cooking Recipe from my mom. Probably every Sunday she used to prepare the Beef stew and palappam / idiyappam as the breakfast. It’s a good combination.My kids also like her special Beef stew.


    Simple Indian Beef Stew Cooking Recipe

    Ingredients:-
    • Beef cut in to small pieces - 1 cup
    • sliced onions – 1 big size
    • Potato cut in to small pieces – 1/2 cup
    • Carrot cut in to small pieces – 1/2 cup
    • Soaked green peas – ½ cup
    • Green chilies(split) - 5 nos
    • Turmeric powder - 1/2 tsp
    • Ginger(chopped) – 1 tbsp
    • Garlic(chopped) – 1 tbsp
    • Cinnamon(Karugapatta) - 1" piece
    • Cardamom(Elakka) - 5 nos
    • Cloves(Grambu) - 4 nos
    • Fennel(Perum Jeerakam) – ¼ tsp
    • First coconut milk from half of a coconut – 1 cup
    • second coconut milk from half of a coconut – 2 cup
    • Coconut oil – 2 table spoon
    • Small onion chopped- 1 tbsp
    • Salt – According to your taste
    • Powdered black pepper - 1 tsp
    • Curry leaves – 2 stems
    Simple Indian Beef Stew Cooking Recipe

    Method :-

    • Prepare `GHARAM MASALA` by grinding together bay leaves, cinnamon, cardamom, cloves, black pepper seeds and fennel.

    • Cook the Beef with all the other ingredients (except small onion, Powdered black pepper and oil) in second coconut milk.

    • Add the thick first coconut milk and continue cooking on low heat until it boiled.

    • Add the Powdered black pepper and mix it well.

    • Turn off the heat and set this aside.

    • Heat the coconut oil in a frying pan.

    • Add all sliced onions and sauté till brown.

    • Add little curry leaves .

    • Add this into previously prepared Beef stew and stir well.

    • Serve hot with bread , dosa, idiyappam , palappam or vatteppam.

                Simple Indian Drum Stick (Sajni ka phal / muringhakka) Masala is a vegetarian dish with overtones of South Indian style of cooking.I learnt this recipe during my working days from one of my South Indian friends who would bring it in her tiffin box with rotis.I remember the days when we would swap our tiffin boxes and how I'd lap up delicious North Indian fare like stuffed parathas and chole while my friends would relish our South Indian dishes like masala dosas,idlis and vada.

               I always tried out different combinations of a particular dish(which is new to me) using different spices with recipes like potato - peas and potato - spinach finally settle for one which is suited to my palate in terms of spice and flavor. If I feel that the flavor of a dish needs to be pepped up a bit in terms of spice then I do make a subtle change without playing too much with the ingredients and cooking style of the authentic original recipe.The end result has never been disappointing so far and I always had my family and friends relish the food served to them.

                Drum Stick (Sajni ka phal / muringhakka) masaala is very simple,everyday dish regularly cooked in many Indian kitchens.Drum Sticks are cooked in a spiced gravy of onions and tomatoes and it makes a great curry with rice, bread,rotis and chapatis.I also make this sometimes as an accompaniment to a subtle flavored rice or steamed white rice.     Simple Indian Drum Stick (Sajni ka phal / muringhakka) Masaala Cooking Recipe

    Ingredients:-

    • Drum Stick (Sajni ka phal / muringhakka) cut in to two pieces- 250 g
    • Onion chopped finely - 2 large
    • Garlic finely minced - 3 cloves
    • Ginger finely minced – 1 small piece
    • Curry leaves - 2 stems
    • Green chilly slit length wise – 3 no’s
    • Red chilly powder- 1 tbsp (adjust according to your choice)
    • Coriander powder - 1 tsp
    • Turmeric powder- 1/4 tsp
    • Salt- according to your taste
    • Tomatoes finely chopped - 3 medium size
    • Water – 1/4 cup
    • Oil - 4 tbsp
    • chopped coriander leaves for garnish – as required

    Simple Indian Drum Stick (Sajni ka phal / muringhakka) Masala Cooking Recipe

    Method:-
    • Heat oil in a cooking vessel and add the curry leaves and stir fry for a few seconds till the flavors are released in the oil.
    • Now add onions and saute till the onions turn light brown.
    • Add ginger and garlic and saute till they turn light brown.
    • Add the green chilies.
    • Add the tomatoes and stir fry till the oil separates and it gets mushy.
    • Add all the powders and stir fry till the oil separates and it gets mushy.
    • Add the salt and water. Mix well
    • Add the Drum Stick(Sajni ka phal / muringhakka). Mix well and keep covered with a lid on low heat for 5 minutes.
    • Remove lid and cook further for another 3-4 mts stirring once in a while.
    • Add salt (if necessary) and mix it.
    • Turn off heat.Garnish Drum Stick Masala with chopped coriander leaves.
    • Serve hot with bread/rotis/chapatis/steamed white rice.

    Simple Indian Kadai Boiled Egg Roast Cooking Recipe

    Ingredients:-

    • Eggs-8 no’s
    • Green chilly chopped-6 no’s( adjustable according to your taste)
    • Onion sliced-2 small size
    • Ginger paste- 2tbsp
    • Garlic paste-2 tbsp
    • Oil for making thick gravy- 3tbsp
    • Oil for frying the eggs- ½ cup
    • Bay leaves(Karuga/Vazhana ela) – 3nos
    • Cinnamon(Karugapatta) - 1" piece
    • Cardamom(Elakka) - 5 nos
    • Cloves(Grambu) - 4 nos
    • Fennel(Perum Jeerakam) - 2 tsp
    • Curry leaves – 2 stems
    • Chilly powder – 1 ½ tbsp ( adjustable according to your taste)
    • Coriander powder – 1 tsp
    • Turmeric powder – ¼ tsp
    • Salt- as required

    Simple Indian Kadai Boiled Egg Roast Cooking Recipe

    Method:-

    • Boil the eggs in water.
    • Give small cuts on each egg with a knife. Otherwise they will blast like bombs when you fry in the oil.
    • Heat a frying pan and pour ½ cup of oil into it.
    • Let the oil be boiled.
    • Fry all the eggs with the minimum heat in the oil till they turn to light brown .
    • Keep the fried eggs aside.
    • Prepare `GHARAM MASALA` by grinding together bay leaves, cinnamon, cardamom, cloves, black pepper seeds and fennel.
    • Heat one vessel and add 3tbsp of oil.
    • Add all sliced onions and saute till brown.
    • Add ginger and garlic paste and saute till brown.
    • Add the green chilies and curry leaves.After 1 minute you’ll get an amazing flavor.
    • Add all the powders.
    • Stir in gentle heat until light brown.
    • Add ¼ cup of water and mix well for 1 minute.
    • Add the fried eggs and cover them with the thick masaala.
    • Cover with a lid and cook for 2 minutes in gentle heat.
    • Turn off the heat and decorate with the curry leaves or coriander leaves.

    • Nestle Sweetened Condensed Milk { Milk Maid} 1 Can
    • Grinded coconut - 3 tbsp
    • Cashew nuts - 8 no's
    • Dry grapes – 10 no’s
    • Salt - 1 pinch
    • Cardamom powder - 1/4 tsp
    • Ghee - 4 tbsp
    • Water - 1 cup

    Simple Indian Moong Daal Kheer( Paayasam) Cooking Recipe

    Method:-

    • Fry the Moong Daal in 1 tbsp of ghee and add the Moong Daal and light coconut milk into pressure cooker.

    • Then pressure cook for 2 whistle or till it becomes mashed.

    • Keep the half of the boiled Moong Daal in a bowl and let it be cooled.

    • Grind the cooled Moong Daal with the thick coconut milk in a mixer grinder.

    • Boil the jaggery ( 2 no’s) in 1 cup of water till it dilutes fully.

    • Pour this jaggery syrup and the grinded Moong Daal into the Pressure cooker and boil.

    • Add the condensed milk and stir it well.

    • Again let it sit in medium heat for another 4-5 minutes.

    • Add the cardamom powder and stir well.

    • After 1 minute, switch off the stove.

    • Heat the ghee in a pan and fry the cashew nuts and dry grapes and add it to the kheer( Payasam/pudding).

    • Serve the kheer hot or chilled after a meal.

              Simple Indian Bindi (Ladies finger) Masala is a vegetarian dish with overtones of North Indian style of cooking.I learnt this recipe during my working days from one of my North Indian friends who would bring it in her tiffin box with rotis.I remember the days when we would swap our tiffin boxes and how I'd lap up delicious North Indian fare like stuffed parathas and chole while my friends would relish our South Indian tiffins like masala dosas,idlis and vada.

              I always tried out different combinations of a particular dish(which is new to me) using different spices with recipes like potato - peas and potato - spinach finally settle for one which is suited to my palate in terms of spice and flavor. If I feel that the flavor of a dish needs to be pepped up a bit in terms of spice then I do make a subtle change without playing too much with the ingredients and cooking style of the authentic original recipe.The end result has never been disappointing so far and I always had my family and friends relish the food served to them.


              Simple Indian Bindi (Ladies finger) masala is very simple,everyday dish regularly cooked in many Indian kitchens.Ladies fingers are cooked in a spiced gravy of onions and tomatoes and it makes a great curry with rice, bread,rotis and chapatis.I also make this sometimes as an accompaniment to a subtle flavored rice or steamed white rice.     Simple Indian Bindi (Ladies finger) Masala Cooking Recipe

    Ingredients:-

    • Ladies finger (Bindi / vendakka) cut in to two pieces- 250 g
    • Onion chopped finely - 2 large
    • Garlic finely minced - 3 cloves
    • Ginger finely minced – 1 small piece
    • Curry leaves - 2 stems
    • Green chilly slit length wise – 3 no’s
    • Red chilly powder- 1 tbsp (adjust according to your choice)
    • Coriander powder - 1 tsp
    • Turmeric powder- 1/4 tsp
    • Salt- according to your taste
    • Tomatoes finely chopped - 3 medium size
    • Water – 1/4 cup
    • Oil - 4 tbsp
    • chopped coriander leaves for garnish – as required

    Simple Indian Bindi (Ladies finger) Masala Cooking Recipe

    Method:-
    • Heat oil in a cooking vessel and add the curry leaves and stir fry for a few seconds till the flavors are released in the oil.
    • Now add onions and saute till the onions turn light brown.
    • Add ginger and garlic and saute till they turn light brown.
    • Add the green chilies .
    • Add the tomatoes and stir fry till the oil separates and it gets mushy.
    • Add all the powders and stir fry till the oil separates and it gets mushy.
    • Add the salt and water. Mix well
    • Add the Ladies finger(Bindi). Mix well and keep covered with a lid on low heat for 5 minutes.
    • Remove lid and cook further for another 3-4 mts stirring once in a while.
    • Add salt (if necessary) and mix it.
    • Turn off heat.Garnish Bindi (Ladies finger) Masala with chopped coriander leaves(if necessary).
    • Serve hot with bread/rotis/chapatis/steamed white rice.

    • Add the thick first coconut milk and continue cooking on low heat until it boiled.

    • Add the powdered black pepper and mix it well.
    • Turn off the heat and set this aside.

    • Heat the coconut oil in a frying pan.

    • Add all sliced onions and saute till brown.

    • Add little curry leaves .
    • Add this into previously prepared chicken stew.Add powdered black pepper and stir well.
    • Serve hot with bread , dosa, idiyappam , palappam or vatteppam.

    Simple Indian Palappam Cooking Recipe

    Ingredients

    • Fried Rice flour(Ari podi)            -       2 cups
    • Cooked rice                                -      1 tbsp
    • Yeast                                          -      1 tsp
    • Sugar                                          -      4 tsp
    • Semolina(Rava)                           -      3 tbsp
    • Coconut                                      -      1 no
    • Salt                                              -     As required


    Simple Indian Palappam Cooking Recipe

    Method:-
    • In a small vessel, add 1/4 glass of lukewarm water to the yeast and 1 tsp of sugar and keep it for 10 minutes. (Do not add hot water as the yeast will not rise). Keep it aside.
    • Add the rava with 1 glass of water and boil till it becomes thick. Keep it to cool.
    • When it becomes cool, add this to a mixer grinder.
    • Add the coconut,cooked rice,remaining sugar , previously prepared yeast and salt to the mixer grinder and grind them with minimum amount of water.
    • Then grind the rice flour with minimum amount of water.(Take care to add minimum amount of water when u mix the flour)
    • Mix all till it becomes it gets a loose consistency.
    • Cover with a lid and keep it for 6 – 8 hours.
    • Make palappams using "Appachatti".
    • Serve the palappams with chicken curry / mutton stew / vegetable stew / egg curry / duck curry / beef curry.

    • Add the boiled dhaal and drum stick leaves into this vessel and mix well.
    • Add the salt and water if necessary.

    • Rice Powder – 1/4 cup
    • Maida - 1/2 cup
    • Rava-1/2 cup
    • Water – 1 ½ cup
    • Wheat flour (Aatta)-2 tbsp
    • Shredded coconut-1cup
    • Jaggery - 1/2 cup
    • Baking powder – 1 pinch
    • Salt – 1 pinch
    • Cardamom powder- ¼ tsp

    Method: -

    • Fry the shredded coconut and keep aside.
    • Heat the water and add jaggery and melt it.
    • Add all ingredients including jaggery syrup (except cardamom powder) in another bowl and mix it well.
    • Add fried shredded coconut to it and mix well.
    • Keep this batter for a minimum of 4 hours.
    • Add the cardamom powder and mix it well.
    • Take one vessel and add oil.
    • When it boils, pour the mix with a table spoon.
    • Fry both side and can be served.

    • Curry leaves – 2 stems

    Simple Indian Cooking Recipe - Preservable Dry Beef Fry

    Method:-

    •  Prepare `GHARAM MASALA` by grinding together bay leaves, cinnamon, cardamom, cloves, black pepper seeds and fennel.
    •  Cook the beef with all the other ingredients(half of the ginger , garlic paste only) including `gharam   masala` in water.
    •  Continue cooking on low heat until almost dry but cooked. Set this aside.
    •  Heat the coconut oil in a frying pan.
    •  Add the remaining ginger and garlic paste and saute till brown.
    •  Add curry leaves and the previously prepared beef .
    • Add powdered black pepper.
    •  Stir in gentle heat until dark.
    •  Serve hot with plain rice or biriyani.
