Simple Indian Stuffed Potato Sandwich
           I learnt this interesting recipe from my husband who was born up in North India. North Indians have a collection of delicious and healthy cuisine which are mouth watering. North Indians are experts in different types of burfis , sweets , stuffed parathas and vegetable curries. Simple Indian Stuffed Potato sandwich is a very delicious vegetarian dish which can be served for breakfast or at any time. It is very simple and easy to prepare. This is not too much spicy. All adults and children definitely like this dish. I would like to share this recipe with you. Please find out the ingredients and method to cook simple Indian stuffed potato sandwich.


Simple Indian Stuffed Potato Sandwich Cooking Recipe
Ingredients :-
  • Wheat flour   -    3 cups
  • Salt  -  as required
  • Water   -  as required
  • Potato boiled and mashed with enough salt   -   2 big
  • Garlic mashed  -  3 cloves 
  • Crushed dry chilly  -  1 tbsp(adjustable)
  • Oil -  1 tbsp
  • Butter / ghee  -  as required

Method:-
  • Mix the Aata / wheat flour with the salt well.
  • Add the necessary water to mix the flour like medium tight. It  should be just like roti / chapatti mixture.
  • Keep it aside.
  • Meanwhile heat the oil in a pan and add the garlic.
  • Saute it till light brown colour. Turn of the heat.
  • Add the crushed chilly and add this to the mashed potato.Mix it well.
  • Take a big ball from the aata mixture and make like roti in circle shape.
  • Put 2 tbsp of potato masala on the half of the roti and spread with a spoon.
  • Fold the roti like semi-circle.Fold it again like the cone shape.
  • With the help of little wheat flour press the stuffed roti .
  • Heat a pan and put the stuffed  roti.
  • Bake the two sides till light brown colour on a medium flame.
  • Spread little butter or ghee on it and serve the stuffed potato sandwich.

              I learnt the Simple Indian Aaloo-Mattar Masala during my office working days from one of my North Indian friends. It can be prepared within 10 minutes.If you are an employee ,this recipe will be helpful o you by saving your time. All adults as well as children definitely like this Potato-Peas masala. You can serve this delicious Aaloo-Matar masala with rotis , pooris , vegetable fried rice or plain rice. In this recipe potatoes are cooked with peas and other spices to get the delicious taste. Simple Indian Potato-Peas (Aaloo-Mattar) Masala Cooking Recipe

Ingredients :-
  • Potato (Aaloo) cut into cubes  - 1 big
  • Peas (Mattar)   -   1 cup
  • Tomato chopped  -  1 medium size
  • Green chilly slit in length  -  3-4 no's
  • Curry leaves  -  2 stems
  • Garlic chopped  -  1 tbsp
  • Ginger chopped  -  1 tsp
  • Garam masala powder  - 1/2 tsp
  • Onion sliced  -  1 big
  • Turmeric powder  -  1/4 tsp
  • Chilly powder  -  1 tbsp
  • Coriander powder  -  1/2 tsp
  • Oil  -  2 tbsp
  • Salt  -  as required

Simple Indian Potato-Peas (Aaloo-Mattar)Masala Cooking Recipe

Method :-
  • Soak the peas(if dried peas) in the water 8 hours before of cooking.
  • Take a pressure cooker and add the peas with salt,curry leaves,turmeric powder,green chillies and 1 1/2 cup of water.
  • Pressure cook till three wistles come out.
  • add the potato cubes into the pressure cooker and cook it till 2 more whistles come out. Now the potatoes and peas will be cooked thoroughly.
  • Heat the oil in another frying pan and add the onion.
  • Saute the onions till it changes to light brown colour.
  • Add the chopped ginger and garlic and saute till they become light brown colour.
  • Add the tomatoes and stir well for 1-2 minutes.
  • Add the coriander powder and Chilly powder and mix well. Stir well till dark brown colour.
  • Add garam masala powder and stir fry for a few seconds.
  • Add the previously cooked potato-Peas in to it. Continue ccooking for 2-3 more minutes.
  • Turn off the stove and serve.

              Today I would like to present my kid's favourite curry , Potato stew( Aaloo masala). It is very easy and simple recipe. I learnt this recipe from my mom , who is very crazy in cooking and eating.She spends her free time in reading the recipe books. Obviously I also follow up her delicious recipes and yet I present them through  my blog. Please find out the ingredients and method of simple Indian Potato stew (Aaloo masala) cooking recipe.

              Simple Indian Potato stew( Aaloo masala) can be prepared within 10 minutes. All adults as well as children definitely like this vegetarian dish. You can seve the potato stew with the plain rice , dosa , idly, pooris or chapathis.


10 minutes Simple Indian Potato stew Cooking Recipe
Ingredients :-

1.
  • Potatoes cut in to small cubes - 2 large
  • Onion sliced - 1 big
  • Green chilly slit in length  -  4- 6 no's
  • Curry leaves -  1 stem
  • Ginger chopped  -  1/2 tsp
  • Tomato sliced  -  1 large
  • Water   -  1 cup
  • Turmeric powder   -  1/4 tsp
  • Salt  -  according to your taste
2.
  • Oil  -  1 1/2 tsp
  • Mustard seeds  -  1 tsp
  • Coriander leaves chopped  -  2-3 stems for garnishing

Method :-
  • Add all the first set of ingredients in to a pressure cooker and pressure cook them till 2 whistles come out. Keep it aside for some time
  • Heat the oil in a pan and add the mustard seeds.
  • Let them pop up and add the cooked potato into it.
  • Add little more salt if necessary and stir well.
  • Serve the Potato stew in a bowl.
  • Garnish with the coriander leaves.
  • Serve the potato stew with Dosa , idaly , chapatis or pooris.

           Simple Indian Aloo Karela Masala is a vegetarian dish with overtones of South Indian style of cooking.I learnt this recipe during my working days from one of my South Indian friends who would bring it in her tiffin box with rice.I remember the days when we would swap our tiffin boxes and how I'd lap up delicious South Indian tiffins like masala dosas,idlis and vada while my friends would relish North Indian food like stuffed parathas and pulaav.

         I always tried out different combinations of a particular dish(which is new to me) using different spices with recipes like potato - peas and potato - spinach finally settle for one which is suited to my palate in terms of spice and flavor. If I feel that the flavor of a dish needs to be pepped up a bit in terms of spice then I do make a subtle change without playing too much with the ingredients and cooking style of the authentic original recipe.The end result has never been disappointing so far and I always had my family and friends relish the food served to them.

           Simple Indian Aloo Karela masala is very simple,everyday dish regularly cooked in many Indian kitchens.Boiled potatoes are cooked in a spiced gravy of onions and tomatoes and it makes a great curry with bread,rotis and chapatis.I also make this sometimes as an accompaniment to a subtle flavored rice or steamed white rice. If you make some changes in the ingredients and method you can prepare delicious Bitter Gourd ( Karela ) curry.Aloo Karela Masala is a healthy food for the diabetic patients and dieters.



Simple Indian Aloo Karela Masala Cooking Recipe

Ingredients:-

  • Bitter guard (karela)                            –          2 large size
  • Potatoes (aaloo)cut into small cubes     -          4 medium size
  • Onion chopped finely                            -          2 large
  • Garlic finely minced                              -          5 cloves
  • Ginger finely minced                             –          1 small piece
  • Dry red chilies crushed                         –          4 no’s
  • Curry leaves                                         -          2 stems
  • Green chilly slit length wise                   –         3 no’s
  • Red chilly powder                                 -          1 tsp (adjust according to your choice)
  • Turmeric powder                                   -         1/4 tsp
  • Salt                                                      –         according to your taste
  • Tomatoes finely chopped                       -         2 medium sized
  • Water                                                  –        1 cup
  • Oil                                                       -        1 1/2 tbsp


Simple Indian Aloo Karela Masala Cooking Recipe

Method:-
  • Cook the potato and bitter guard with salt and turmeric powder in the water.Boil on low heat
  • Heat oil in a cooking vessel and add the onion and saute till the onions turn light brown.
  • Add ginger and garlic and saute till they turn light brown.
  • Now add the green chilies and curry leaves and stir fry for a few seconds till the flavors are released in the oil.
  • Add the tomatoes and stir fry till the oil separates and it gets mushy.
  • Add all the powders and stir for 10 seconds.
  • Add the previously boiled potatoes and bitter guard into this.
  • Mix well and keep covered with a lid on low heat for 2 minutes.
  • Remove the lid and Add salt (if necessary) and enough water to cover the potatoes.
  • Cook further for another 3-4 minutes stirring once in a while.
  • Bring to a boil and let it simmer on low heat till you get the desired curry consistency.
  • Turn off heat.If you like Garnish Aloo Karela Masala with chopped coriander leaves.
  • Serve hot with steamed white rice.
