How to prepare Simple Indian Badam Kheer
            ( Almond-sweet-drink )

              We will start with a delicious and healthy sweet dish once again. Though almost of us are familiar with different types of kheer (payasa), I have found that the payasam just doesn't taste doesn't taste as good. My beautiful and talented sister says, " Your kheer / payasam tastes just like an ice cream. ". My sons say'"Mummy's special kheer / payasam nobody else makes it as delicious and lip smacking ".

             I love festivals , plan for the menu for a festive feast and especially forward to try sweet treats that I'm yet to blog. Badam kheer is an Indian sweet dish that I prepared for Eid Ul Fithar.

             Festivals reflect the cultural diversity of India , a land of many regions. Festivity denotes new clothes, family get together, fun,laughter and most importantly home cooks diligently prepare traditional sweets and elaborate festive meals. Badam kheer / almond-sweet-drink is absolutely mouth-watering. Please find out the ingredients and method of Badam kheer ( almond-sweet-drink) cooking recipe as below.



Simple Indian Badam Kheer (Almond-sweet-drink)

Ingredients:-
  • Almonds ( Badam ) - 1 cup
  • Milk   -    4 -6 cups
  • Sugar   -   same amount as almond paste (about 1 cup )
  • Saffron - 1/2 tsp
  • Cardamom  -    4-6 no's
  • Kesari powder ( Yellow food colour) - 1 pinch (optional)


Simple Indian Badam Kheer ( Almond-sweet drink ) Recipe
Method :-
  • Soak almonds in warm water for 1 hour.
  • Peel skin and grind the almond in to a fine paste with 1 cup of milk instead of water.
  • Measure the amount of almond paste and keep the same amount of  sugar aside.
  • Soak saffron in little cold milk, and keep it aside.
  • Cook the almond paste for 5-10 minutes,while stirring it constantly ,till the flavor comes out.
  • Now add sugar and keep stirring.
  • Add the remaining milk, and boil for 10-15 minutes.
  • Add the ground cardamom an turn off the stove.
  • Add the soaked saffron and kesari powder. Mix well.
  • Serve it cold.

Kitchen tips :-
  • If you like the taste of coconut milk , add instead of cow's milk. Will you try this kitchen tip ?
  • You can add the jaggery syrup instead of sugar. You will get another delicious taste.Try this kitchen tip.
  • You can add a small tin of condensed milk in the last stage.You will get wonderful taste.Try this kitchen tip.
  • You can fry few raisins / kishmis and cashew nuts in 1 tbsp of ghee and add in the kheer at the last stage. Try this kitchen tip also.
